Makes 4 servings, You will need:
1 (16 ounce) package
dry penne pasta
1 teaspoon olive oil
2 - 3 cloves garlic,
minced
1/8 pound prosciutto,
chopped
1/2 teaspoon red
pepper flakes
2 (16 ounce) cans
whole peeled tomatoes (I like Tottorossa)
1/2 cup vodka
1 cup heavy cream
1 cup Parmesan cheese
1/2 cup chopped fresh
basil leaves
salt to taste
Directions:
Bring a large pot of lightly salted water to a boil. Add
pasta and cook for 8 to 10 minutes or until al dente; drain.
Heat oil in a large skillet over medium heat. Saute garlic,
prosciutto and red pepper flakes for 1 minute. Stir in tomatoes, and cook for 3
minutes (I break up the tomatoes with the spatula). Stir in vodka and cream.
Simmer 15 minutes, or until thickened. Stir in Parmesan and chopped basil. Toss
with pasta until evenly coated.
